This warm and hearty soup is perfect for a chilly winter day. It's homey and filling, and pretty simple to make. I hope it keeps you warm during these cold days!
Ingredients
1 whole chicken (or 4 chicken breasts)
1 large white onion, halved
1 bunch celery
2 carrots
1 turnip
1 parsnip
Salt, to taste
Pepper, to taste
Noodles of choice
Directions
Clean chicken and put into a large deep pot. Cut the carrots and celery into 2 inch pieces. Clean the turnip and parsnip and peel off skin.
Add enough water to cover chicken completely and bring to a boil. Boil for 30 minutes and then add onion and boil for an additional 30 minutes. Season with salt and pepper. Remove chicken from pot.
Add carrots and celery, season with salt and pepper and cook 30 minutes.
Add turnip and parsnip to the soup and continue to boil for 20 minutes.
Turn oven to broil and place chicken in oven to brown. (Chicken will be fully cooked from the soup, you are just broiling to brown skin).
Cook noodles according to package directions.
My mother kept the soup, chicken and noodles separate. That way everyone can add as much of each as they want to their bowl! Enjoy soup hot, as is or topped with grated parmesan cheese.
Make it Vegetarian! Skip the chicken and use vegetable broth instead of water. Add Gardein chicken at the end if desired!
