This breakfast casserole is so simple and is bursting with flavor! Perfect for feeding a hungry crowd in the morning.
Ingredients
1 lb. Italian sausage
4 cups frozen hash browns, thawed
1 cup shredded cheddar cheese
1 cup frozen spinach, thawed and drained
1 cup shredded mozzarella cheese
4 eggs
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 tbsp shredded parmesan cheese
Directions
Heat oven to 350°F.
In a large non-stick skillet, cook sausage over medium heat until browned. Drain any excess oil.
In a medium bow, beat eggs, milk, salt and pepper.
In a separate bowl, combine potatoes and cheddar cheese.
Grease an 8-inch square baking dish. In the greased baking dish, layer half of the potato mixture, all of the sausage, spinach and tomatoes, and top with the remaining potato mixture and mozzarella cheese. Pour egg mixture over entire dish. Cover with foil.
Bake for 1 hour. Uncover, sprinkle with parmesan cheese and bake an additional 15 minutes.
Let stand 5 minutes before serving. Enjoy!
*You can also make this dish the night before and simply bake in the oven in the morning! Less prep in the early hours and you still have a delicious and hearty breakfast.
Make it Vegetarian! Swap the sausage for your favorite veggie sausage patty! I prefer Morning Star brand. Defrost and chop and then add to recipe as stated.
