These meatballs are packed with flavor, great to eat straight out of the pan (as my dad would enjoy them), on top of pasta, or on a meatball parmesan sub!
Ingredients
1 lb. chop meat
1 lb. ground pork
2 eggs
3 cloves garlic, minced
6 tbsp. grated Parmesan cheese
4 tbsp. bread crumbs
Salt, to taste
Dried parsley - approx. 1 tsp
Olive Oil
Directions
Place chop meat and pork in a bowl and mix to combine. Make a well in the center. Add eggs, garlic, cheese, parsley, bread crumbs, and a sprinkle of salt on top. Mix together with hands. If needed, add water with hands a little at a time to make mixture soft so it's easier to form into balls. Take about 1 tbsp at a time and roll into small balls (you can make bigger if you want, but we think smaller tastes better!).
Pour enough olive oil to cover the bottom in a pan over medium heat. Once hot, place meatballs in and cook on all sides until browned. Remove from pan and place on a paper towel lined plate. Repeat process until all meatballs are cooked.
Once cooked, place meatballs in a pan with your favorite sauce and simmer. Enjoy as is or on top of your favorite pasta!
Make it Vegetarian! Substitute chop meat and ground pork for a vegetarian beef substitute! Brands include Impossible Meat & Beyond Meat, which you can find in your local grocery store.
