Roasted Fingerling Potatoes

This delicious side dish is the perfect accompaniment to any meal, and is so easy to make!

Ingredients

  • 1 lb fingerling potatoes

  • 2 tbsp butter, melted

  • 3 cloves garlic, minced

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tbsp olive oil


Directions

Preheat oven to 425°

Cut potatoes in half, lengthwise.

Toss potatoes with butter, garlic, Italian seasoning, salt and pepper.

Coat a cast iron skillet with olive oil.

Spread potatoes evenly in skillet, cut side down will crisp up better.

Bake for 20-25 minutes, mixing halfway through, until potatoes are crispy.
